Mmm-mmm, rice pudding! The secret is to cook it slow and long and top up the milk occasionally if it looks like it's getting dry.
It's soft, milky, buttery, a fragrant hint of nutmeg, and nice with a spoonful of good strawberry jam. Such a lovely 'afters' on a cold winter's night!
